Soloji’s uttapam recipe

To make the uttapam of semolina, first take a fine semolina. Take it in a bowl and add thick sour curd to it. Now add water according to the need. It does not have to be very thinner nor keep it very thick. Now keep this paste for about 30 minutes.

At the same time, now make coconut or peanut chutney to eat with it. To make chutney, add green coriander, mint leaves, ginger, green chillies, roasted gram, curd and salt and make sauce. After this, take mustard oil in a pan to apply tempering in the chutney and prepare the tempering with mustard seeds, urad dal, curry leaves, dry red chili. Now put this tempering in coconut sauce.

After this, mix the paste well to make uttapam. Now add salt, cumin, a little finely chopped green chili. After mixing everything well, now add baking powder to it and mix the batter once again. Prepare fine onion, tomato capsicum and green coriander for uttapam.

Now take a non stick pan and grease it lightly with oil and clean it with a napkin or clean cloth. Now spread uttapam’s batter on the pan. Put onion, tomato, coriander and capsicum on it and cook it. At the same time, to bring the test in vegetables, sprinkle light chaat masala, salt and pepper powder so that it looks even more tasty in the test. Keep it covering it for about 3-4 minutes and then turn it over. In the second way, bake the uttapam lightly and serve hot with chutney.
